Ingredients A:
• 2 eggs
• 2 tbsp cooking oil
Ingredients B:
• 2.5 cups of cooked rice
• 2 tbsp cooking oil
• 2 cloves minced garlic
• Trio colours capsicums (cut into cubes)
• 2 shiitake mushrooms (cut into cubes)
• 3 pieces mock Luncheon (cut into cubes)
• 1.5 tsp mushroom powder
• 2 tbsp soy sauce
• salt and Pepper to taste
• Dried spring onions
Instructions:
1) Heat the wok over high heat. Pour in the oil, fry the scrambled eggs until its half cooked. Dish out and set aside.
2) To continue, pour in another portion of oil, saute the minced garlic until its aromatic.
3) Add the rice, stir fry for 2 to 3 mins. Add in the capsicums, mushrooms and Luncheon meat. Mix and stir well.
4) Add the soy sauce, white pepper, mushrooms powder, eggs and continue to stir the fried rice for a couple of minutes. Taste test and off heat. Garnished with dried spring onions before serve.
