This recipe uses:

Moribun Miso, Naturally Fermented https://gohinode.com/miso-awase-rice-barley-blend/
200g Hand-stretched Udon
3 teaspoons olive oil
1 teaspoon minced garlic
120g minced meat
50g cubed carrot
50g cubed potato
2 teaspoons Moribun Miso
4 tablespoons water
1 teaspoon mirin
1 Cook noodles as per packet instructions. Drain and add 1/2 teaspoon of olive oil, toss to coat.
2 Steam/ Boil the carrots and potatoes for 10mins. Set aside.
3 Mix the miso with water. Whisk until the miso is fully diluted. Set aside.
3 Heat the remaining oil over medium pan, add the minced garlic. Saute for a min and add in the mince meat. Break up with a wooden spoon, stir fry for 5 minutes.
4 Add in the miso mixture and mirin. Stir to combine, bring to the boil then reduce heat to low and simmer for 5-8 minutes or until sauce has thickened.
5 Serve noodles with the miso mince meat. Top with spring onions and sesame seeds
