Pesto Soba with Yuzu Miso Tofu

About Japanese Yuzu Miso

INGREDIENT

  • For Pesto Soba Noodles: 
  • 1 cup baby spinach 
  • 1 cup pine nuts 
  • 1/3 cup nutritional yeast 
  • 2 cloves garlic 
  • 3 tbsp olive oil 
  • Salt and pepper to taste
  • Add water for desired consistency 
  • Japanese soba noodles

For Yuzu Miso Sauce:

  • 1 tbsp Yuzu Miso 
  • 1 tsp coconut sugar 
  • warm water to desired consistency 

COOKING METHOD

Blend all ingredients together and mix with Japanese soba noodles. Garnish with toasted pine nuts. 

Sauce: Mix ingredients in small bowl and drizzle over tofu.
